Cucumber Lavender Spritz

4oz Water

1/3 cup Granulated Sugar

1/4 cup Fresh Mint Leaves

1 tbsp Dried Edible Lavender

3 Large Cucumbers (peeled and chopped)

4 Limes (juiced)

6 cups Club Soda

 

Mix water and sugar in a saucepan and bring to a boil, stirring the sugar until is dissolves.

Remove from heat and stir in mint and edible lavender.

Steep for 15mins then strain simple syrup, discarding the mint and lavender and let cool.

Meanwhile, put diced cucumber and lime juice in blender and blend until smooth.

Once syrup is cool, combine lavender mint simple syrup and cucumber lime puree in a large pitcher and top off with soda water.

Pour over ice and garnish with mint leaves and a lemon or lime wheel.

Serves 6-8
